ANZAC Biscuit Recipe


I make Anzac Biscuits every year on Anzac Day (26th April – Last Tuesday!) and so I thought I'd share my recipe. Anzac Day is celebrated by Australians and New Zealanders in order to remember those who died in service. These biscuits have an interesting (and also heavily contested) history. It is thought that they were the biscuit of choice to send in care packages to soldiers during WW2 due to their long shelf life. 

They are lovely sweet biscuit (egg free!) made from oats and golden syrup. Perfect for a snack or dunking into your cup of tea. I hope you enjoy these as much as I do!

Why I Never Follow the Recipe

So, what is the point of at recipe? A recipe is a teaching tool, a guide, a point of departure. You have to follow it exactly the first time you make the dish. But as you make it again and again, you will change it, you will massage it to fit your own taste, your own sense of aesthetic’. 

Wise words from Jacque Pepin (author of La Techniques)! I wholeheartedly agree with his thoughts but my attitude towards following a recipe is not nearly as noble. I could say that my inability to follow a recipe stems from a desire to make the dish fit my own interpretations and tastes but it all really boils down to fact that when it comes to making new dishes I am incredibly impulsive.

101 in 1001 Recap

My relationship with New Years resolutions have always been tense. I'd pick a single goal and work towards it with the best of intentions but then life would always get in way. I'd lose my commitment to that goal in favour of new ones or I'd get off track with the inevitable distractions of work, home, friends and relationships. Late 2015, I found the Day Zero Project a new way to motivate myself and I created a 101 Things in 1001 Days List. Creating this list has allowed me to keep track of several goals and it also relieves the pressure of trying to achieve everything in a single year. This works far better me than trying to achieve a single New Years resolution.

I thought I'd do a brief recap of how I went with my list in 2016. While I didn't really blog about what I had achieved during the year (or about anything at all really...), I did manage to tick off quite a few things off.

Earlier on in the year I visited Bali for the first time! In Perth going to Bali is almost a rite of passage and it seems like nearly everyone has been at least once, with people visiting multiple times every year. For such a tiny island there are lots of place to visit and things to experience. It doesn't matter if you're an adrenaline junkie or a culture buff there is something for everyone.

This year is absolutely flying by! It's been a whirlwind of changes with work, house developments, family stuff, plus all those little everyday things that just pop-up. All these things mixing together with a lack of motivation and inspiration has pretty much ended up with me putting a lot of of things in my life on hold (this blog being one of them!). A little bit of soul searching has helped me realize that I'm on the fast track to burning out. I know this term is often thrown around but there is no better way to describe it and now that I'm understanding myself better, I can step back, reassess and move forward.

Waiting..For progress updates on how the house is going! We've just entered lockup, so there is only a couple more months to go.

Exploring...  Perth! I've got some time off from work and instead of going away, I'll be exploring my home city. There's a whole ton of local places that I'll be checking out.

Listening... Suicide Squad: The Album. I loved the movie and I love the album just as much!

Trying... To declutter. With the prospect of moving out coming up closer I've decided it's time to sort through all my stuff. I've got piles of stuff to sell, donate and throw away, and all non-essentials that I want to keep are getting boxed up.

Watching... Luke Cage. With plenty of  plot twists, action scenes, Marvel easter eggs and a kick ass sound track, this series can't go wrong!

Watching..Black Sails has finally started up again with their third season. I can finally get my pirate fix! They've introduced Edward Teach (Blackbead!) this season and I can't wait to see what they do with this character.

Baking...  Apple Roses! I found this recipe on Pinterest awhile ago and my friends birthday was the perfect excuse to try them out.

Drinking... Mojitos! The perfect summer drink. I've been playing it healthy and holding out on the rum though...

Waiting... For Summer to be over! Perth is apparently staring a run of 40°C days. It's not my idea of fun.

Buying... Birthday presents. I have a whole bunch of birthdays coming of people who I am quite close to. This year I'm planning ahead to try and find the perfect present for each individual. Does anyone have any suggestions?
